Workshop Gemüseveredelung in Tenna
Description
At the workshop, we will acquire knowledge about fermentation and try out different recipes with mountain vegetables, herbs and berries. This should be a first step towards developing products that are marketable. Organised by the Innovation Centre for Mountain Agriculture (IZB) and IG BergGemüse. Led by Laila Tulinski from the Institute for Food and Beverage Innovation at the ZHAW. She researches fermentation and contributes her diverse knowledge.
IG BergGemüse is (still) a small group of people who are committed to joint product development in cooperation with the IZB and the ZHAW. Some grow vegetables themselves and bring them to the workshop, others collect herbs and berries, while others are particularly interested in preservation. In winter, a joint tasting takes place.
