He only sources meat from carefully selected organic farms that treat the animals with respect and keep them in a species-appropriate manner. The wine cellar in Stoffel offers first-class white and red wines from personally selected winemakers from the Bündner Machtel. There are also classics and specialties from Ticino, Italy, France, Portugal and Spain, many of which are organic.
