Grischuns
Grischuns are a delicate and savoury appetiser pastry filled with cheese, cured ham and tomatoes. The recipe makes 8 to 10 pieces.
Ingredients
- 250 g puff pastry
- 100 g mountain cheese
- 50 g Sbrinz
- 50 g cured ham
- 1 tomato
- 1 egg
Preparation
- Roll out the puff pastry to a thickness of 2–3 mm. Cut out rectangles measuring 8 ×\times× 12 cm.
- Cut both cheeses into sticks approximately 5 cm long and 0.5 cm thick. Cut the tomato into wedges.
- Wrap two cheese sticks and one tomato wedge in half a slice of cured ham, then roll them up in the pastry rectangles.
- Brush the edges with egg white and press firmly to seal.
- Place the rolls on a buttered baking tray and brush with egg yolk.
- Bake in a hot oven at 250°C until lightly browned and crispy.
- Serve hot.
Our tips
Grischuns taste best when made with butter puff pastry from a bakery. We recommend replacing the Sbrinz with a mature Alpine cheese.
