Classic and traditional, based on time-honored recipes passed down through generations, Chef Manuel Telser prepares typical regional dishes. He also enjoys modern interpretations, minimal changes, and complements them with dishes from contemporary cuisine. Regional products and producers are prioritized, so the roots of Graubünden and Veltlin are always palpable. Our purchasing and cooking are entirely in keeping with the principles of the "Slow Food" movement, which promotes quality and regionality, protects biodiversity, and maintains close contact with small, local food producers.
