Plain in Pigna

Bündner Spezialität Plain in Pigna auf einem Blech mit frischem Blattsalat
Once baked on embers, today a tradition on the table. The legendary Engadin oven-rösti, made from «Ardöffels» (potatoes) and bacon, is a nourishing meal. And it tastes even better with a fresh salad.

Ingredients for 4 People

  • 800 g raw potatoes
  • 150 g Salsiz or Landjäger
  • 150 g raw ham
  • 20 g butter
  • 1 clove of garlic
  • Salt and pepper, nutmeg
  • 50 g flour
  • 120 g coarse cornmeal
  • 2 dl milk

Preparation

  • Peel the potatoes and grate them into a bowl using a rösti grater.
  • Cut the meat into small cubes and finely chop the garlic clove.
  • Mix the meat pieces, flour, garlic and cornmeal well into the potatoes.
  • Pour in the milk and season with a little salt, pepper and nutmeg.
  • Spread the mixture about 3 cm high in a buttered baking dish.
  • Bake in a preheated oven at 180 °C for about an hour.

Serve with a side of salad or apple sauce.
