Plain in Pigna
Once baked on embers, today a tradition on the table. The legendary Engadin oven-rösti, made from «Ardöffels» (potatoes) and bacon, is a nourishing meal. And it tastes even better with a fresh salad.
Ingredients for 4 People
- 800 g raw potatoes
- 150 g Salsiz or Landjäger
- 150 g raw ham
- 20 g butter
- 1 clove of garlic
- Salt and pepper, nutmeg
- 50 g flour
- 120 g coarse cornmeal
- 2 dl milk
Preparation
- Peel the potatoes and grate them into a bowl using a rösti grater.
- Cut the meat into small cubes and finely chop the garlic clove.
- Mix the meat pieces, flour, garlic and cornmeal well into the potatoes.
- Pour in the milk and season with a little salt, pepper and nutmeg.
- Spread the mixture about 3 cm high in a buttered baking dish.
- Bake in a preheated oven at 180 °C for about an hour.
Serve with a side of salad or apple sauce.
