"The traces of Graubünden confectioners in the countries of destination" The history of Graubünden confectioners has already been extensively studied from the point of view of migrants. The memory of this past is still alive in our country today, also because the traces of this history are still clearly visible in some villages, including Poschiavo. The patrician houses of the nineteenth century and the economic initiatives financed by immigrants, which led the valley to a recovery, testify to the pioneering spirit of those who have succeeded abroad. But what did the activity of pastry chefs abroad lead to? This part of the story is still little studied. What traces have Graubünden's pastry chefs left in the many European cities? And how did people in the countries of emigration see the activities of Graubünden confectioners? The 2025 Pastry Chefs' Conference in Poschiavo will explore these questions. For this reason, four experts from Spain, Poland, England and France have been invited, who will present the results of their research from their point of view. There will also be a dialogue with local people who have studied the life of Graubünden's pastry chefs in depth. The language of the conference is Italian. The presentations in English and French will be simultaneously translated into Italian in the hall.
